Wheat HALWA

HALWA ..when we say it, the taste simply melts in our tongue ..Tirunelveli  Halwa is a famous one across the world .. In Madurai, there's a sweet shop called "PREMA VILAS" where they make delicious halwas .
.I simply love 'em ..Whenever I pass through that shop,  I'll step into the shop and will taste at least 50 gms of halwa .. And now here's the recipe of wheat halwa that is made from extracting wheat milk from wheat flour ..Though the recipe takes time to make, but it tastes simply awesome ..!!!

Wheat Halwa :)


Preparation time: 3 hours
Cooking time: 1 hour
Serves: 6

Ingredients:

Wheat flour - 1 cup
Sugar - 1 cup
Cashews - 1 tbsp
Water - 1000 ml (1 ml)
Ghee - 1/2 cup (melted)

Method:

1. Take a wide bowl, sift the wheat flour, start to knead it into dough (that how do we make for chapathi) ..No need of adding oil/ghee, simply add water little by little to the wheat flour and make into a hard dough ..




2. Now immerse it into 1 litre of water ..Let it rest at least for 2-3 hours ..


3. After 2-3 hours, start pressing the kneaded dough inside the water and extract wheat milk ..press it hard so that you'll get whitish wheat milk from it ..


4. Now sieve and extract pure wheat milk  .. throw off the residues ..


5. In a wok/non-stick kadai, heat and add in melted ghee, cashews to it ..Once cashews turn brown, add in the extracted wheat milk into it .. 

6. Once it starts to boil, reduce to low flame, add in 3/4th cup of sugar ..


7. Initially wheat milk looks watery, once you keep on stirring, it thickens ..


8. In a separate small kadai, start caramelizing sugar by adding 1 tbsp of ghee and 1/4  cup of sugar .. once sugar melts completely in ghee, it turns to brown color ..

       

9. Once it turns brown, add it back to the thickening wheat milk ..

10. Now keep on stirring ..Stir, stir and stir ..by adding a tsp of ghee in frequent intervals ..




11. It started to thicken ..keep on stirring ..in low flame ..


12. Halwa started to leave the sides, and oozes out the poured in ghee .. You can collect that ghee and can use it for drizzling in  dosas/any other recipes that use ghee ..

See how it looks after leaving its sides ..
13. Now your halwa is ready to serve :)

The tasty WHEAT HALWA is ready :) :) :)
Note:

1. I've completely used ghee in making this halwa, you can use oil if you're diet conscious ..or you can melt ghee and oil together and use it ..
2. Adding food color is optional .. (I've not used food color in this recipe) as the brownish color of halwa is depends on caramelizing sugar ..
3. Don't caramelize sugar deeply, as it thickens and becomes rock hard sugar candy ..so be careful while caramelizing ..
4. For rich taste, always keep flame in low from the beginning to the end of this recipe ..
5. Add in ghee/oil while stirring halwa in between (say it for every 5 mins) frequent intervals for a glossy texture ..
6. All you need is patience, patience and patience to do this delicious recipe ..

  1. I tried dis wheat halwa.... Soo delicious... Urs processing method very easy to do it.... My relatve al were shockd to do this recipe.. Bcoz, not stickn n kadai & also like shop halwa.... Hats off to u ma..
