Here's the most popular snack recipe/festive recipe/street food recipe of Tamil Nadu ..ULUNDHU VADAI ..You can find this in most of the places in Tamil Nadu ..
Now we'll go the most common recipe, which is loved by all in our place .. :)
Preparation time: 2 hours
Cooking time: 15 mins
Serves: 15
Ingredients:
Urad dal (without skin) - 1 cup
Raw rice (Pacharisi) - 1/4 cup
Ginger -2 tsp minced
Garlic - 2 tsp minced
Pepper corns - 1 tsp
Carrot - 2 tsp (grated)
Shallots (chinna vengaayam) -5 (finely chopped)
Green chilli - 1 (finely chopped)
Curry leaves - a string
Coriander leaves - handful (finely chopped)
Hing - 1/4 tsp
Crystal salt - as required
Oil - to deep fry
Method:
1. Soak Urad dal and raw rice separately for 45 minutes and refrigerate it for another 20-30 minutes ..
2. Drain the water used for soaking urad dal and raw rice ..In a grinder or blender, start grinding raw rice to smooth and add in urad dal without transferring raw rice batter ..Do not add too much of water ..just sprinkle very very little amount of water ..excess addition of water, consumes oil while frying vadai ..



3. After grinding the batter, transfer it to a bowl ..Add in ginger, garlic, grated carrots, chopped onions, green chilli, curry leaves, coriander leaves, hing, crystal salt .. Mix well with clean hand ..


4. Take a deep bottomed kadai, heat oil ..let it heat completely ..to check its hotness, drop in a very small amount of batter, if it rises up immediately then oil is ready to make vadais .. Now reduce heat into medium flame ..
5. Start making vadais ..You can use two ways ..Either by your fingers or in the back side of a small plate ..
If you're making it by your fingers, wet your fingers in a bowl of water ..take a small amount of batter in your fingers, flatten it ..make a hole in the middle ..drop it in to the oil ..Do this very carefully ..Drop it near the corners of the kadai ..


If you're making it on the back of a small plate, grease its surface by oil ..take a small amount of batter, flatten it, make a small hole in the middle ..slowly transfer it to your hands ..drop into the hot oil very slowly ..be careful again while doing this ..


6. Let it fry for few minutes ..Cook on both the sides ..just flip into oil again and again .. Once it turns golden color, transfer it to a paper towel to remove oil .. Then serve hot with chutney :)


7. If you can't do these two methods, simply make them into bondas ..both tastes same ..just shape differs .. :) ..Take a gooseberry sized batter in your hands ..make a round shape with your fingers ..drop into the hot oil .. Sounds simple na .. Let it fry on all sides ..Once it turns golden brown ..transfer it to a bowl ..
