Here's a simple beetroot poriyal ..
Preparation time: 10 mins
Cooking time: 20 mins
Serves: 3
Ingredients:
Beetroot - 1 (chopped)
Turmeric powder - 1/2 tsp
Chilli powder - 1.5 tsp
Salt - as required
To Temper:
Oil - 1 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Chana dal/kadalai paruppu - 1.5 tbsp
Hing/Perunkaayam - 1 tsp
Green chillis - 1
Method:
1. Start cooking chopped beetroot in boiling water. Once it is 3/4th cooked, add in salt, turmeric powder and red chilli powder.
2. In a separate tadka pan/tempering pan, heat oil, splutter mustard seeds, add in other tempering ingredients. Cook till dals turn brown ..
3. Once beetroots are cooked, pour in the tempered ingredients.
4. Serve hot as side dish to curd rice/sambar rice ..
