Vengaaya Pulikulambu (Village Special Onion-tamarind /Gravy)

Village special VENGAYA PULIKULAMBU :)



Vengaaya pulikulambu :)

Ingredients:

Shallots/Chinna vengayam – 25
Tomatoes – 2 medium sized, chopped
Tamarind juice – ½ cup
Turmeric powder – ½ tsp
Chillipowder – 1 tbsp
Coriander powder – 1 tbsp
Jaggery – ½ tbsp
Salt – to taste

Tempering:

Gingelly Oil – 3 tbsp
Mustard seeds – 1 tsp
Urad dal – 2 tsp
Cumin seeds/Jeerakam – ½ tsp
Dry red chilli -  2
Curry leaves – 1 string

Method:

1. Heat gingelly oil in a kadai, add mustard seeds, cumin seeds, urad dal, dry red chilli and curry leaves.
2. After spluttering add in shallots, saute till it becomes soft. Add in tomatoes, turmeric powder, chilli powder, coriander powder and salt as required. Mix them well. Cover and cook till tomatoes turn mushy.
3. Add in tamarind juice, once it reaches boiling stage, add in jaggery.
4. (Optional) Add 1 tbsp of gingelly oil in a tadka pan/small kadai, heat it, and pour it over the tamarind gravy to give a glossy texture.
5. Sprinkle over some uncooked curry leaves and serve it with rice.

Add in shallots, saute it ..

Now add in tomatoes ..

Add in masalas ..

Mix it ..

Cover and cook till tomatoes turn mushy ..

Extract tamarind juice ..


Add in tamarind juice ..

Add in jaggery ..

In a separate pan, heat gingelly oil ..

Add in the heated oil into the gravy ..



 Tangy, spicy vengaaya puli kulambu is ready .. Serve hot with rice :)
